Theaflavins are oxidative transformation products derived from flavan-3-ols (commonly termed catechins) present in fresh tea leaves during controlled fermentation processes. These compounds feature a characteristic benzotropolone molecular framework generated through paired catechin oxidation, requiring one substrate with vicinal trihydroxy groups and another containing ortho-dihydroxy arrangements. Structural elucidation has identified multiple principal theaflavin variants, including theaflavin (TF), its monogallate derivatives (TF-3-G and TF-3'-G), the digallate form (TFDG), and epitheaflavic acid as representative examples.

Theaflavins are the most important active constituents of black tea extract.
